3 Toast Toppers To Try


It’s time to say goodbye to boring breakfasts and bland toast.

Toast is one of my all-time favourite brekkie options because there is so much opportunity for variety! I love to choose an assortment of incredible, delicious ingredients and experiment with different combinations. 

When travelling, this is my go-to. It’s quick and easy to prepare, plus contains balanced nutrition to fuel for the day. I seriously love exploring local produce and delicacies to try!

Bruschetta & Cottage Cheese Toast

We’ve taken classic Italian bruschetta to the next level with this super nourishing  version! Enjoy tangy and bursting flavours of tomato and basil atop creamy cottage cheese for extra protein and calcium. This option is highly satiating, and with a fresh, crunchy sourdough – it makes the perfect brekkie, lunch or snack option!

Time to cook: 5 minutes, Serves: 1

Ingredients:

  • 100g cherry tomatoes, diced (around 12 tomatoes)
  • 2 tbsp chopped basil leaves 
  • 1 tbsp finely chopped red onion
  • 1 tsp red wine vinegar 
  • 1 tsp extra virgin olive oil 
  • 1 slice sourdough, or two small 
  • 3 tbsp cottage cheese 

Method:

Place the tomatoes, basil leaves and onion in a mixing bowl. Add in the red wine vinegar, extra virgin olive oil and season to taste with sea salt and black pepper. 

Toast the sourdough. 

Spread the cottage cheese on top and then spoon over the bruschetta mix. 

Smoked Salmon & Avocado Toast

Say ‘good morning’ with this cafe-worthy toast topper! Starring protein-packed smoked salmon, heart-healthy avocado and crunchy, antioxidant-rich onion, you can whip this up in 5 minutes and enjoy the benefits of starting your day on a high note.  Season well with lemon and pepper for maximum oomph factor! 

Time to cook: 5 minutes, Serves: 1

Ingredients:

  • 1 slice sourdough, or two small 
  • ½ avocado, mashed 
  • 100g smoked salmon 
  • ½ cucumber, sliced 
  • Sprinkle of finely sliced red onion
  • 1 tsp capers
  • ½ lemon 
  • Black pepper 

Method:

Toast the sourdough. 

Spread the smashed avocado on top, followed by the smoked salmon, cucumber, a little red onion and capers. 

Squeeze some lemon juice over the top and season with black pepper. 

Hummus, Tomato & Egg Toast

Enjoy a delightful fusion of flavours with our next-level tomato toast! This nutritious breakfast option is a textural delight with creamy hummus and jammy eggs, served atop juicy, immune-boosting tomatoes and crispy sourdough. This is a quick and easy way to ensure your morning begins with a balance of protein, carbohydrates and quality fats for energy and satiety!

Time to cook: 5 minutes, Serves: 1

Ingredients:

  • 1 slice sourdough, or two small 
  • 3 tbsp hummus 
  • 1 gourmet tomato, sliced 
  • 1 tbsp finely chopped basil 
  • 1 boiled egg, cooked to your liking, we used a soft-boiled egg

Method:

Toast the sourdough. 

Spread the hummus on top, followed by the sliced tomato, a sprinkle of basil and a little drizzle of extra virgin olive oil. 

Season with sea salt and black pepper and serve with 1-2 eggs, cooked in your preferred method.
